Greensboro, North Carolina was founded in 1808 and named after Revolutionary War General Nathanael Greene. Initially settled as a small village, Greensboro quickly grew into a thriving city thanks to its strategic location on the railway lines connecting Charlotte and Raleigh. During the Civil War, Greensboro served as a major hub for Confederate troops and supplies. Following the war, the city experienced significant industrial growth, becoming a center for textiles, tobacco, and furniture manufacturing. In the 1960s, Greensboro played a key role in the civil rights movement, with the famous sit-in protests at the Woolworth’s lunch counter bringing national attention to the fight against segregation. Machete is a New American restaurant known for its rotating small and large plates, including items like roasted cauliflower with brown butter and hazelnut, smoky king trumpet mushroom skewers, crispy duck wings, and olive oil toast topped with warm chocolate ganache. The chefs, Kevin Cottrell and Lydia Greene, were named as semifinalists for Best New Restaurant nationwide by the James Beard Awards.
